Many of us know that the cut received its name from the famed Delmonico’s steak house in New York. Basically a Delmonico is a thick cut(about 2”), very high-quality piece of meat with plenty of marbling. Delmonico’s are cut from the short loin lending to its tenderness. This cut should be cooked quickly at a high heat by either grilling or broiling ( a good cast iron reverse sear works as well!) Either way the flavor is legendary and makes it a must try!!
